Chicken Chow Mein

A nutritious blend of vegetables in a mild sauce, served over a bed of crispy noodles.

Ingredients:

  • 1/4 cup vegetable oil
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 cups chinese cabbage sliced
  • 3 cups celery sliced thin
  • 1/2 medium onion sliced
  • 1 can bean sprouts drained
  • 1 can water chestnuts sliced
  • 2 teaspoons sugar granulated
  • 2 cups chicken broth
  • 2+1/2 teaspoons corn starch
  • 1/4 cup cold water
  • 1/4 cup soy sauce
  • 2 cups chicken cooked, diced
  • 1/2 cup mushrooms
  • 1 bag crispy rice noodles

Directions:

  1. Heat oil, salt and pepper in deep skillet.
  2. Add cabbage, celery, bean sprouts, water chestnuts, onion, and sugar.
  3. Stir in chicken broth; cook over low to medium heat about 10 minutes.
  4. In a small bowl, blend cornstarch, water and soy sauce.
  5. Add to vegetable mixture and stir until mixture thickens.
  6. Add chicken and mushrooms, heat through.
  7. Serve hot over crispy rice noodles.
