Chicken Cacciatore

A healthy alternative to meat sauce. This freezes well without the pasta.

Ingredients:

  • 4 chicken breast boneless, skinless
  • 1 jar (32 ounce) spaghetti sauce
  • 1 can (4 ounce) mushrooms
  • 1 tablespoon sugar granulated
  • 16 ounces penne pasta, dry

Directions:

  1. In a crock-pot or slow cooker add chicken, sauce and mushrooms.
  2. Cook on low 7-8 hours or until chicken is cooked and fork tender.
  3. Remove chicken breasts onto a plate and with two forks pull chicken apart to shred.
  4. Add chicken back into the crock-pot, add sugar, stir and cook on low for an additional 1-2 hours.
  5. Cook pasta according to package instructions, drain.
  6. Serve over hot pasta.
