Mashed Potato Salad

This is a very light but filling meal on a hot summer day. Serve with a side bowl of your favorite chilled fruit.

Ingredients:

  • 8 cups mashed potatoes, chilled
  • 1/2 head lettuce
  • 1/2 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tomato sliced thin
  • 1 cucumber sliced thin
  • 3 large eggs hard boiled, sliced
  • 1 teaspoon paprika
  • 1/2 cup french fried onions

Directions:

  1. On a large platter lay out the lettuce to make a bed.
  2. Carefully spread mashed potatoes onto lettuce and form to make a large patty approximately 1" thick.
  3. Spread mayonnaise over mashed potatoes sparingly.
  4. Sprinkle potatoes with salt and pepper.
  5. Place sliced tomatoes alternating with sliced cucumbers over mayonnaise.
  6. Top with hard boiled egg slices.
  7. Sprinkle evenly with paprika.
  8. Top with french fried onions.
  9. Refrigerate for 1 hour before serving.
  10. Serve chilled.
