Chicken Salad

There use to be a local deli that served the most amazing chicken salad on flaky butter croissants. It was to die for but that little sandwich was so expensive. I was on a mission to make the same sandwich at home for a fraction of the cost. I succeeded.

Chicken Salad

There use to be a local deli that served the most amazing chicken salad on flaky butter croissants. It was to die for but that little sandwich was so expensive. I was on a mission to make the same sandwich at home for a fraction of the cost. I succeeded.

Ingredients:

  • 2 small chicken breast, boneless, skinless, cooked, diced
  • 4 tablespoons whipped topping
  • 3 slices apple peel on
  • 1 stalk celery chopped
  • 3 dried apricots chopped
  • mayonnaise to taste
  • 6 large butter croissants baked

Directions:

  1. I usually grill or bake the chicken the day before and season with seasoning salt.
  2. In a mixing bowl add diced chicken, celery, apple and apricot.
  3. Mix in cool whip till dissolved.
  4. Add the mayonnaise until it reaches the consistency that you want.
  5. You may have to add more cool whip if you can't taste the hint of sweetness.
  6. Spread salad on croissants.
  7. Wrap croissant in paper towel and microwave for about 10-15 seconds to take a little of the chill out and warm the croissant.
  8. Serve immediately.
