Paula’s Pineapple Pie

This is my Aunt Paula’s recipe and it is my favorite fruit pie.

Ingredients:

  • 2 9 inch pie crusts uncooked
  • 1+1/2 cups sugar granulated
  • 2+2/3 cups crushed pineapple with juice
  • 3 tablespoons flour all purpose
  • 1 egg white
  • 1 tablespoon water

Directions:

  1. Preheat oven to 425F.
  2. Blend sugar and flour together in a bowl.
  3. Place pineapple in a sauce pan and sprinkle with the sugar/flour mixture, stir to blend.
  4. Cook over medium heat until mixture thickens.
  5. Remove from heat and allow to cool at room temperature for about 20 minutes.
  6. Pour pineapple filling in uncooked pie crust and top with the other crust, pinching the edges together.
  7. In a small bowl whisk egg white and water.
  8. Using a pastry brush, paint the top crust until completely covered with egg wash.
  9. Place 3 1? slits in the middle of top crust.
  10. Bake until crust is golden brown.
  11. Serve warm or chilled.

    I have to tell you, I just made this pie in my mini pie maker and it tastes wonderful, very simple filling to make, I did cut back on the sugar and only used 1 cup, thank you for posting it, I hate canned pie filling and now i know how to make it,
