Garden Casserole

A single female friend of mine who lives ‘out in the boonies’ has a very nice garden. She is always posting pictures of her fresh vegetables on Facebook and one day she posted a photo of this dish. I knew I had to try it, as I love anything with summer squash in it. I was not disappointed, this is very filling and could be a meal in itself. I’m not sure what the original recipe was called but I named it appropriately after my friends garden.

Garden Casserole

A single female friend of mine who lives ‘out in the boonies’ has a very nice garden. She is always posting pictures of her fresh vegetables on Facebook and one day she posted a photo of this dish. I knew I had to try it, as I love anything with summer squash in it. I was not disappointed, this is very filling and could be a meal in itself. I’m not sure what the original recipe was called but I named it appropriately after my friends garden.

Ingredients:

  • 3 cups summer squash sliced
  • 3 cups broccoli chopped
  • 1/4 cup onion chopped
  • 1 can (10 ounce) cream of chicken soup
  • 1 cup sour cream
  • 1 cup matchstick carrots
  • 1 box (6 ounce) herb flavored stuffing mix
  • 1/2 cup butter melted

Directions:

  1. Preheat oven to 350F.
  2. Cook sliced squash, broccoli and chopped onion in salted water, boiling 5 minutes; drain.
  3. In large bowl, combine soup and sour cream, stir in carrots.
  4. Fold in drained squash, broccoli and onion.
  5. Combine stuffing mix and butter.
  6. Spread 1/2 of stuffing mixture in the bottom of an 8×10 inch greased baking dish.
  7. Spoon vegetable mixture over stuffing.
  8. Top with additional stuffing mix.
  9. Bake for 25-30 minutes until heated thoroughly and stuffing starts to brown.
