Mini Fried Pineapple Pies

Now who doesn’t like a fried pie? A mini pineapple one to boot! Using my Aunt Paula’s pineapple pie filling, why not stuff it into mini pies. I do love everything trial size. I’m certain you could make these with any flavor of filling you like.

Mini Fried Pineapple Pies

Now who doesn’t like a fried pie? A mini pineapple one to boot! Using my Aunt Paula’s pineapple pie filling, why not stuff it into mini pies. I do love everything trial size. I’m certain you could make these with any flavor of filling you like.

Ingredients:

  • 2 9 inch pie crusts uncooked
  • 1+1/2 cups sugar granulated
  • 2+2/3 cups crushed pineapple with juice
  • 3 tablespoons flour all purpose
  • vegetable oil for frying
  • 1/2 cup powdered sugar

Directions:

  1. Blend sugar and flour together in a bowl.
  2. Place pineapple in a sauce pan and sprinkle with the sugar/flour mixture, stir to blend.
  3. Cook over medium heat until mixture thickens.
  4. Remove from heat, and refrigerate for 2 hours until fruit filling cools and thickens.
  5. Preheat oil to 350F in a deep fryer or deep skillet.
  6. Unroll pie crust onto a floured mat, using a biscuit cutter or 3? round cookie cutter cut out circles of dough and place on wax paper lined cookie sheet.
  7. Place 1 tablespoon of cooled fruit filling onto each dough circle slightly off center.
  8. Fold over dough to create a half-moon, pinch edges together with a fork until dough is sealed.
  9. Fry 5-6 pies at a time until crust is golden brown, about 3 or 4 minutes.
  10. Place cooked pies on paper towel lined plate to absorb any excess oil.
  11. After all pies are fried sprinkle with powered sugar.

    My Mom use to make something like a fried pineapple pie and with the juice she thicken it and pour it over the pie.. yummm..Does anyone know how to do this???
