Salmon Patties

The mother of my high school sweetheart gave me this recipe. Growing up on the East Coast, I had eaten plenty of fish & chips but never tasted a salmon pattie before moving to Oklahoma. I remember eating these at her home, always with macaroni and cheese as a side dish. So when I made these, of course I had to have mac & cheese as well. The self-rising cornmeal is crucial, trust me on this!

Salmon Patties

The mother of my high school sweetheart gave me this recipe. Growing up on the East Coast, I had eaten plenty of fish & chips but never tasted a salmon pattie before moving to Oklahoma. I remember eating these at her home, always with macaroni and cheese as a side dish. So when I made these, of course I had to have mac & cheese as well. The self-rising cornmeal is cruical, trust me on this!

Ingredients:

  • 1 large can pink salmon lightly drained
  • 1 cup self rising cornmeal
  • 2 small eggs slightly beaten
  • 1/2 cup onion chopped
  • salt & pepper to taste
  • vegetable oil for frying

Directions:

  1. Heat approx 1/2 inch of oil in skillet over medium to high heat.
  2. Mix salmon, 1 cup self rising cornmeal, beaten eggs and onion in a bowl.
  3. Shape into 3-4? round patties, about 3/4? thick.
  4. May need to add some more cornmeal if mixture is too wet to work with.
  5. Fry in skillet over medium to high heat, browning each side.
  6. Garnish with ketchup or sauce of choice and serve with macaroni & cheese of course.
