I’ve had this recipe for a little under ten years. I know I got it off the internet but could not tell you what site. It is the best coffee cake I’ve ever had, hands down.
1+1/4 cups sugar granulated, divided
1/4 cup shortening
1 large egg
1/2 cup milk
2+1/3 cups flour all purpose, divided
2 teaspoons baking powder
1/2 teaspoon salt
2 cups blueberries fresh
1/2 teaspoon cinnamon
1/2 cup butter
Preheat oven to 375F.
Grease and flour 8×8 inch baking pan or 9 inch deep dish pie plate.
Cream shortening and 3/4 cup sugar together.
Add egg and blend until mixed well.
Stir in flour, baking powder & salt.
Mix until batter consistency, it will be quite thick.
Fold in blueberries.
Spread batter in prepared pan spreading evenly to edges of pan.
In separate bowl combine 1/2 cup sugar, 1/3 cup flour and cinnamon.
Fold in butter by small pieces and mix until mixture is crumbly.
Sprinkle topping mix over batter.
Bake 25-30 minutes or 35-40 minutes if using a glass pan.
