Parmesan Mashed Potatoes with Carrots

At my house growing up we very seldom had mashed potatoes without carrots mashed in with them. Don’t knock it until you try it.

Ingredients:

  • 2 pounds potatoes peeled, chopped
  • 1 can sliced carrots drained
  • 1 cup milk
  • 1 tablespoon garlic powder
  • 6 tablespoons butter
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1/4 cup parmesan cheese
  • 1/4 cup sour cream

Directions:

  1. Cook potatoes in large pot of salted water, boil until potatoes are fork tender, drain well.
  2. Add drained carrots to potato pot for the last 2 minutes of cooking.
  3. In a large bowl, mash potatoes and carrots with hand masher.
  4. Add milk, butter, garlic powder, salt and pepper, mix well.
  5. Fold in parmesan and sour cream.
  6. Add more seasoning, if desired.

    I thought I was the only one who did this. I boil fresh carrots with the potatoes. Its not only yummy for me but it my son will only eat carrots this way.

      It must be a mother thing Angela. After growing up with carrots in my mashed potatoes it seems odd to make them without carrots.
