I know this sounds weird but it is really good.  Think of coconut in place of the sauerkraut.  My aunt gave me this recipe about 30 years ago.

Chocolate Sauerkraut Cake

I know this sounds weird but it is really good. Think of coconut in place of the sauerkraut. My step-aunt gave me this recipe about 30 years ago.

Ingredients:

    Cake
  • 2/3 cup butter
  • 1+1/2 cups sugar
  • 1 teaspoon vanilla
  • 3 large eggs
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2+1/4 cups flour all purpose
  • 1 cup milk
  • 2/3 cup sauerkraut rinsed, drained, chopped
  • Frosting
  • 3/4 cup cocoa powder
  • 1/8 teaspoon salt
  • 2 cups powdered sugar
  • 1/2 cup butter
  • 1 teaspoon vanilla
  • 3/4 cup heavy whipping cream
  • 1/2 cup sauerkraut rinsed, drained, chopped

Directions:

    Cake
  1. Preheat oven to 325F.
  2. Grease and flour 2 8-inch cake pans.
  3. Cream 2/3 cup butter and 1+1/2 cups of sugar until smooth.
  4. Add 1 teaspoon vanilla and eggs, one at a time.
  5. Sift together 1/2 cup cocoa powder, baking powder, 1/2 teaspoon salt, baking soda and flour.
  6. Add flour mixture alternately with milk to the butter/sugar mixture.
  7. Mix well.
  8. Fold in 2/3 cup drained sauerkraut.
  9. Pour batter evenly into prepared cake pans.
  10. Bake in preheated oven for approximately 30 minutes, or until cake springs back at the touch.
  11. Cool cake in pans on wire rack for 15 minutes.
  12. Frosting
  13. Combine 3/4 cup cocoa, 1/8 teaspoon salt and 2 cups powdered sugar.
  14. Cream 1/2 cup butter and 1 teaspoon vanilla, add whipping cream.
  15. Combine the sugar mixture and cream mixture a little at a time until all mixed.
  16. Beat 2 minutes at high speed with an electric mixer.
  17. Fold in 1/2 cup drained sauerkraut.
  18. Spread on cooled cake.
