Potato Bacon Soup

My daughter gave me her recipe for potato soup and I added to it a little bit. This soup is so good and filling that you will not walk away hungry at all. As a matter of fact you may need a nap like my grandson in the photo below.

Potato Bacon Soup

Potato Bacon Soup

My daughter gave me her recipe for potato soup and I added to it a little bit. This soup is so good and filling that you will not walk away hungry at all. As a matter of fact you may need a nap like my grandson in the photo above.

Ingredients:

  • 5 pounds potatoes peeled, cubed
  • 1 medium yellow onion diced fine
  • 1 pound bacon fried crispy, chopped
  • 1 cup carrots raw, diced
  • 1 cup corn frozen
  • 1 envelope (1.4 ounce) knorrs vegetable recipe mix
  • 18 ounces filled evaporated milk
  • salt & pepper to taste

Directions:

  1. In large sauce pan cover diced potatoes and onion with just enough water to cover the top of the potatoes and onions.
  2. Boil over medium to high heat until potatoes are soft but still formed and not mushy.
  3. Meanwhile boil carrots in water in a small saucepan until tender with a fork, drain.
  4. When potatoes are done, do not drain but add to the pot the carrots, crumbled bacon, corn, vegetable mix and filled evaporated milk.
  5. Season with salt and pepper if desired.
  6. Simmer over low heat approximately 30-40 minutes or until potatoes start to dissolve and soup thickens.
  7. Serve hot.
