So much flavor in this dish.

Ingredients:

  • 2 pounds chicken thighs boneless, skinless, cut into strips
  • 1 pound smoked sausage cut into 1 inch pieces
  • 2 tablespoons vegetable oil
  • 1 large onion chopped
  • 1 green bell pepper chopped
  • 3 stalks celery sliced
  • 3 cloves garlic minced
  • 1 can (28 ounce) petite diced tomatoes with juice
  • 2 cups chicken broth
  • 2 teaspoons cajun spice mix
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 pound medium shrimp peeled, deveined, tail-off
  • 1+3/4 cups long grain rice
  • salt & pepper to taste

Directions:

  1. Heat vegetable oil in a large pot over medium heat.
  2. Brown chicken and sausage in the oil until sausage starts to brown.
  3. Add onion, green pepper, celery and garlic.
  4. Cook for an additional 10 minutes until onions become soft.
  5. Add tomatoes, chicken broth, spices and rice.
  6. Bring to a slow boil.
  7. Reduce heat, cover and simmer for 20-30 minutes until most of the liquid is absorbed.
  8. Add shrimp, cover and continue to simmer on low heat until shrimp turns pink.
  9. Garnish with parsley if desired.
