Tomato Basil Parmesan Soup

Goes great with grilled cheese sandwiches.

Ingredients:

  • 2 (14 oz) cans diced tomatoes, with juice
  • 1 cup celery, finely diced
  • 1 cup carrots, finely diced
  • 1 cup onions, finely diced
  • 1 teaspoon dried oregano
  • 1 tablespoon dried basil
  • 4 cups chicken broth
  • 1/2 cup flour
  • 1 cup parmesan cheese
  • 1/2 cup butter
  • 2 cups half and half, warmed
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Directions:

  1. Add tomatoes, celery, carrots, onions, oregano, basil and chicken broth to crockpot.
  2. Cover and cook on low for 5-7 hours, until vegetables are soft.
  3. Melt butter over low heat in a skillet and add flour.
  4. Stir constantly with a whisk for 5-7 minutes.
  5. Slowly stir in 1 cup hot soup.
  6. Add another 3 cups and stir until smooth.
  7. Add all back into the crockpot.
  8. Stir and add the Parmesan cheese, warmed half and half, salt and pepper.
  9. Add additional basil and oregano if needed.
  10. Cover and cook on low for another 30 minutes.
