Ingredients:
- 2 teaspoons olive oil
- 2 chicken breasts, boneless skinless
- salt and pepper to taste
- ¼ cup + 2 tablespoons chicken broth
- ¼ cup maple syrup
- 1 teaspoon thyme
- 2 cloves of garlic, sliced thin
- 1 tablespoon cider vinegar
- 1 tablespoon brown mustard

Directions:
- Preheat the oven to 400 degrees.
- Heat the oil in a large oven proof skillet over medium high heat.
- Season chicken with salt and pepper.
- Cook chicken 4-5 minutes on each side, or until golden brown.
- Remove the chicken from the skillet and set aside on a plate.
- Add the broth, syrup, thyme and garlic slices to the pan.
- Stir until well combined.
- Add the mustard and vinegar, scraping the pan to loosen any browned bits.
- Stir to blend well.
- Slice the chicken on the top in four or five lines, don’t slice through.
- Add the chicken back to the pan along with any juices from the plate.
- Place the skillet in the oven and bake for 10 minutes, or until the chicken is cooked through.
- Remove the skillet from the oven and let the meat rest for 5 minutes
- Serve with the extra sauce on the side.
