I love, love, love sweet potatoes and I just can’t find enough ways to cook them. The cheese in this adds a nice touch.

Parmesan Roasted Sweet Potatoes

I love, love, love sweet potatoes and I just can’t find enough ways to cook them. The cheese in this adds a nice touch.

Ingredients:

  • 2 large sweet potatoes, peeled and cubed
  • 2 teaspoons minced garlic
  • 2 tablespoons olive oil
  • 3 tablespoons Parmesan cheese, finely grated
  • sea salt & pepper to taste
  • 1/2 teaspoon thyme

Directions:

  1. Preheat oven to 400F.
  2. In a medium size bowl add cubed potatoes.
  3. Drizzle with olive oil, top with garlic and cheese.
  4. Season with salt and pepper.
  5. Toss to coat.
  6. Line a baking sheet with foil.
  7. Spread potatoes evenly onto baking sheet.
  8. Sprinkle with thyme.
  9. Bake 40 minutes or until potatoes are fork tender.
  10. Increase temperature to broil and cook and additional 5 minutes or until potatoes start to brown.
  11. Serve immediately.
