Fresh Pineapple Salsa

The fresh flavors of summer, in a sweet refreshing salsa. Use it to compliment any fish, chicken or pork dish.

Ingredients:

  • 6 slices fresh pineapple
  • 1/4 cup red onion, minced
  • 1/2 teaspoon fresh lime juice
  • 1/8 teaspoon sea salt
  • 1 tablespoon chopped cilantro

Directions:

  1. Dice the fresh pineapple into very small pieces
  2. In a medium size bowl, blend together the pineapple and onion.
  3. Squeeze lime juice over the pineapple.
  4. Sprinkle with salt and cilantro.
  5. Toss gently to coat.
  6. Serve immediately.
