I love the combination of the heat from the jerk seasoning and the crisp sweetness of the pineapple.  I made the salsa specifically to go with these sliders. The fact that it's ground chicken on a wheat roll makes me feel like it's healthy as well.  Win, win!

In honor of my former mother-in-law who passed away on Monday.  She use to make these ribs every New Years Eve.  I would have never thought to boil ribs and then bake them.  I added the seasoning to mine because I like a little bit of kick.  These are so good, I ate almost the whole rack.

When I was a preschooler, there was an elderly woman who lived a couple of houses down.  My sister and I would play under her large cedar tree and she would bake goodies for us.  Her banana cake has been on my mind for over 40 years.  I finally found one that taste just like hers.  I'm in heaven!

I love sweet potatoes any time of year, cooked any way.  I also love coconut EVERYTHING.  When I saw this recipe I thought, 'why of course' although I've never used coconut oil.  I had to wait several weeks before my local grocery store got a shipment of coconut oil in.  The stocker at the grocery store informed me "it's the worst thing you can eat", to which I replied "well, I find that hard to believe since you can't keep it on the shelf".  End of conversation.
