My Mom use to make stuffed peppers when I was a kid, of course I hated them. I really didn't care for bell peppers until just recently. I didn't want to make the traditional stuffed pepper with rice and ground beef, so this is my version of a stuffed pepper. It was quite tasty.

This one is a keeper. I like the way the parmesan binds to the pasta when mixed with the pasta water. The sweet crab with the subtle tartness of the lemon made this delicious.

This was a birthday dinner for my future son-in-law, he ate almost half of it the first night. My daughter took the finished product photo's and was having problems with her camera zooming in. None the less, it was very good and I will be making this again perhaps in smaller single-serving spring form pans.

The rotel tomatoes with green chilies add just the right amount of kick. Combined with with black olives and chicken, the greek yogurt cream cheese ties it all together. The best part of it all, it's very low in fat creating a healthier creamy chicken enchilada. They tasted a lot better than they looked!

A very tasty one dish meal. This would be great to take to a potluck as you could make a very large pan of them at once. The chicken was tender and juicy and onions and peppers were cooked perfectly with just enough spice.

I'm pretty sure Paula Deen and I have the same palate, I just wish I had her imagination and skills. This corn casserole was so yummy! I added the green chiles and only used 1/2 of the cheese and creamed corn that it called for. I also substituted the sour cream with greek no-fat yogurt (my new love). I will definitely be making this again.
