The rotel tomatoes with green chilies add just the right amount of kick.  Combined with with black olives and chicken, the greek yogurt cream cheese ties it all together.  The best part of it all, it's very low in fat creating a healthier creamy chicken enchilada.  They tasted a lot better than they looked!

A very tasty one dish meal.  This would be great to take to a potluck as you could make a very large pan of them at once.  The chicken was tender and juicy and onions and peppers were cooked perfectly with just enough spice.

I'm pretty sure Paula Deen and I have the same palate, I just wish I had her imagination and skills.  This corn casserole was so yummy!  I added the green chiles and only used 1/2 of the cheese and creamed corn that it called for.  I also substituted the sour cream with greek no-fat yogurt (my new love).  I will definitely be making this again.

Today is National Empanada Day. I had already posted a recipe for Chicken Empanadas quite a while back. I had some left over barbequed pork ribs and really didn't want to use rice so I used the sweet potato instead. You could really make these with whatever meat you have on hand, using rice or potatoes as a filler.
