I've been making these since my kids were little. They are a lot easier to eat than the hard shelled tacos and not as messy. One pound of ground beef goes a long way when making these tacos.

Today is National Empanada Day. I had already posted a recipe for Chicken Empanadas quite a while back. I had some left over barbequed pork ribs and really didn't want to use rice so I used the sweet potato instead. You could really make these with whatever meat you have on hand, using rice or potatoes as a filler.

The saltiness of the ham is offset by the sweet relish, and the mayo holds it all together. This is a great easy recipe using left over Easter ham. This ham salad makes a great snack sandwich or would even be good on crackers.

This was really very tasty. My daughter ate some and dipped hers in maple syrup. I drizzled some bbq sauce over my slice and it was very good that way as well. You could assemble this the night before, just cover the bundt pan with plastic wrap to avoid the dough drying out and keep it in the refrigerator.

I love patty melts. I remember the first time I had one, it wasn't until my teen years, after we had already moved to the Midwest. I didn't have any rye bread so I compromised with the garlic toast. Butter, onions, meat and cheese . . . Who needs rye?

This is great for a weekend breakfast. I had some leftover steak from last night which was perfect for breakfast. I put the salsa inside of my wrap, but you could also top the wrap with it and eat it with utensils. You can throw this together in less than 5 minutes.

Growing up in Rhode Island, this is the only "hot dog" we ever ate. It's really nothing like a typical hot dog. The wiener has a natural casing on it and comes in a long string like sausage. This particular wiener is obviously not available here in the Midwest so I used a regular wiener. The sauce is cooked for hours and the wiener must be assembled in the correct order to make it authentic "all the way". The bun must be steamed as well. I love recipes like this that bring me back a few years.

I know most people would call this a sub or a hoagie, but where I grew up they were called grinders. Not just the meatball kind but even ham or tuna. The cheese was melted into the roll in the pizza oven and then then meat was heated as well before veggies were place on them. Making these with frozen meatballs is an easy weekday fix for dinner.
