The mother of my high school sweetheart gave me this recipe.  Growing up on the East Coast, I had eaten plenty of fish & chips but never tasted a salmon pattie before moving to Oklahoma.  I remember eating these at her home, always with macaroni and cheese as a side dish.  So when I made these, of course I had to have mac & cheese as well.  The self-rising cornmeal is cruical, trust me on this!

I had a dish similar to this at Johnny Carino's several years ago.  My mother-in-law ordered this dish from a banquet style Italian restaurant in Warren, Ohio.  I also ordered it and was hooked.  I then tried to get it the next time I went to Johnny Carino's but they no longer served it.  Leave it to Paula Deen to have such a great recipe for it.

Yet another recipe from my family growing up.  I know it used to be made with butter, milk, flour and Velveeta cheese but looks like I took a short cut somewhere along the way.  I like this served with a couple slices of bread with butter and sweet pickles.
