Taco's are such an easy meal to throw together in a hurry.  I usually cook several boneless, skinless chicken breast at a time and freeze them for later use.  With the chicken already cooked, these can be ready in a pinch.  The chicken is a healthy alternative to traditional beef taco's.  Can be made with soft flour tortilla's as well.

Made with greek yogurt cream cheese, this spread provided all the flavor of jalapeno poppers without all the work or calories. I served it on crackers and the butter flavor of the cracker complimented the spread perfectly.

The flavor of these were good, they just didn't come out looking pretty.  The original recipe called for chunky applesauce and I used regular.  I expected more of a stickiness to them that was not there.

A very tasty one dish meal.  This would be great to take to a potluck as you could make a very large pan of them at once.  The chicken was tender and juicy and onions and peppers were cooked perfectly with just enough spice.

In honor of my former mother-in-law who passed away on Monday.  She use to make these ribs every New Years Eve.  I would have never thought to boil ribs and then bake them.  I added the seasoning to mine because I like a little bit of kick.  These are so good, I ate almost the whole rack.

One of my favorite appetizers when watching a sporting event or just hanging out with friends is little sausages saturated in bbq sauce on a cracker with a slice of cheese.
